{"id":252,"date":"2022-10-13T15:50:00","date_gmt":"2022-10-13T14:50:00","guid":{"rendered":"http:\/\/dietharmony.com\/?p=252"},"modified":"2022-10-12T15:57:56","modified_gmt":"2022-10-12T14:57:56","slug":"low-carb-cream-pie-with-strawberries","status":"publish","type":"post","link":"http:\/\/dietharmony.com\/index.php\/2022\/10\/13\/low-carb-cream-pie-with-strawberries\/","title":{"rendered":"Low carb cream pie with strawberries"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<p>Budget friendly <a href=\"https:\/\/yourcustomplan.com\/?hop=majlo76\" data-type=\"URL\" data-id=\"https:\/\/yourcustomplan.com\/?hop=majlo76\" target=\"_blank\" rel=\"noreferrer noopener\">Keto<\/a> pie will love your whole family. <\/p>\n\n\n\n<h3>Ingredients<\/h3>\n\n\n\n<p><strong>Pastry<\/strong><\/p>\n\n\n\n<ul><li>1 cup (4 oz.) <a href=\"https:\/\/www.dietdoctor.com\/ingredients\/almond-flour\">almond flour<\/a>, ground<\/li><li>\u00bd cup (1<sup>2<\/sup>\u2044<sub>3<\/sub> oz.) coconut flour<\/li><li>2\u00bd oz. butter, softened and cut into small cubes<\/li><li>1 large egg<\/li><li>2 tbsp lemon zest<\/li><li>2 tsp <a href=\"https:\/\/www.dietdoctor.com\/low-carb\/keto\/sweeteners\">erythritol<\/a><\/li><li>1 tsp vanilla extract<\/li><\/ul>\n\n\n\n<p><strong>Filling<\/strong><\/p>\n\n\n\n<ul><li>1\u00bc lbs fresh strawberries, hulled (see tip)<\/li><li>\u00be cup heavy whipping cream<\/li><li>1 tsp vanilla extract<\/li><li>1 tsp <a href=\"https:\/\/www.dietdoctor.com\/low-carb\/keto\/sweeteners\">erythritol<\/a><\/li><\/ul>\n\n\n\n<h3>Instructions<\/h3>\n\n\n\n<ol><li>Preheat the oven to 425\u00b0F (200\u00b0C). Line an 8.5&#8243; (22 cm) tart pan with parchment paper that&#8217;s about 1.5&#8243; (4 cm) larger than the pan.<\/li><li>Mix the pastry ingredients together in a medium-sized bowl with a spoon, or add to a food processor, and pulse until just combined; don\u2019t over-mix as the pastry will be too soft.<\/li><li>Using your hands, press the pastry into the tart pan, covering the bottom and sides, about\u00a0 0.5&#8243; (1.5 cm) thick. Use a fork to prick a few holes in the pastry base, to prevent it from rising.<\/li><li>Bake on the middle rack for 8\u201310 minutes, or until firm to the touch and golden brown.<\/li><li>Remove the pastry from the oven and use the parchment to lift it carefully onto a cooling rack. After a couple of minutes, carefully slide the parchment out from the bottom so the pastry can cool more quickly.<\/li><li>While the tart cools, add a bit more than 1\/4 of the strawberries to a food processor bowl, and pur\u00e9e until smooth. Use a knife to quarter the remaining berries. Add the pur\u00e9e and quartered berries to a medium-sized bowl, mix together, and set aside.<\/li><li>Add the heavy cream, vanilla, and erythritol to a mixing bowl. Use a whisk, or an electric mixer (on medium\/medium-high speed) to whip together, until soft peaks form. Set aside in the fridge.<\/li><li>As soon as the pastry has almost cooled to room temperature, transfer it to a serving plate. You can use the base of a loose-bottomed cake pan to transfer it from tray to plate.<\/li><li>Pour the strawberry mixture over the pastry and top with the whipped cream.
