Creamy Avocado Chickpea Zoodles

A healthy vegan meal salad idea.

Single Serving 

Ingredients:

  • Parsley
  • Tomato
  • Chickpeas
  • 1 Zucchini
  • 1/4 tsp coriander (preferred) or Italian seasoning
  • 1/4 tsp salt
  • 1/8 tsp paprika
  • 1/8 tsp cayenne pepper
  • 1/2 avocado
  • 1 small lemon

1. Prepare your veggies, and spiralize your zucchini with a spiralizer (I use veggetti). Mix your zoodles and veggies until well combined

2. For your sauce, combine the avocado, lemon juice, and spices in a separate bowl. Then mash+mix until you get a “saucey” texture and everything is well combined

3. Combine the sauce with your zoodles and veggies. Mix until well combined.
